Jack Frost Cocktail ❄

Isn't it beautiful? Not only is it appealing to the eye - the combination of pineapple juice, coconut, blue curacao and rum will leave your taste buds dancing. This cocktail is for anyone dreaming of warmer days during this frosty season, and it makes the perfect addition to a winter party or girls night menu. Follow Amy Brinkley's two step Jack Frost cocktail recipe and be prepared for what tastes like a festive version of a piña colada!


Here's what you'll need:

  • Light corn syrup or honey, for rimming glasses

  • Flaked coconut, for rimming glasses

  • 8 cups of ice - more or less, depending on desired consistency

  • 1 cup of pineapple juice

  • 1/2 cup of blue curacao

  • 1/2 cup of vodka or light rum (Brinkley used Vodka)

  • 1/2 cup cream of coconut

Ready? Set. Go!

1. Pour a thin layer of corn syrup onto a plate and dip the rims of the glasses into the corn syrup, then the coconut flakes.


2. In a blender, blend ice, pineapple juice, blue curacao, vodka and cream of coconut until desired consistency is reached


3. Pour into glasses and serve immediately


4. Enjoy :)

Side Note from Jemilia:

1. Amy Brinkley used Vodka when making the Jack Frost cocktail - which is just fine, I however recommend using Malibu Rum - it's absolutely delightful!
