Baked Pumpkin Doughnut Holes

Autumn is an exciting time of year. The leaves are falling, the air is cooler, the skies are brighter, oversized hoodies surround us, hot chocolate and Pumpkin everything – You can never go wrong with a pumpkin pastry during the autumn season. Today’s recipe is simple, straight forward, positively delicious, and compliments Autumn perfectly. Dan's Baked Pumpkin Doughnut Holes -technically mini muffins look and taste just like doughnut holes. I love the comforting flavors and perfect blend of spice, sweetness and are super moist from the addition of the pumpkin puree.


Prep Time: 20 Minutes Cook Time: 12 Minutes Total Time: 32 Minutes

 

Here's what you'll need:

For The Doughnuts:

1 3/4 cup of all purpose flour

2 teaspoons of baking powder

1/2 teaspoon of salt

1 teaspoon of pumpkin pie spice

1/2 teaspoon of ground nutmeg

3/4 cup of pumpkin puree, NOT Pumpkin Pie Filling

1/3 cup of vegetable oil

1 egg

1 teaspoon of vanilla extract

1/2 cup of milk


For The Cinnamon Sugar Coating:

1 Stick of unsalted butter, melted

2/3 cups of granulated sugar

1 tablespoon of cinnamon

Ready? Set. Go!

1. Pre heat the oven to 350 degrees


2. Generously grease a 24 cup mini muffin pan with non-stick spray


3. Add dry ingredients into a medium bowl

  • flour, baking powder, salt, nutmeg and pumpkin pie spice

4.In a separate bowl, add wet ingredients

  • pumpkin puree, brown sugar, vegetable oil, vanilla extract, egg and milk

  • mix until smooth

5. Add the dry ingredients to the wet ingredients and stir until just combined

  • BE CAREFUL - You don't want to overtax the batter

6. Scoop the batter into the 24 cup mini muffin pan, filling each cup - 3/4

7. Bake for 10-12 minutes

  • or until toothpick comes out clean

8. Remove from the oven and allow the doughnuts to cool completely

9.Place the melted butter in one bowl and the cinnamon and sugar in another


10. Dip the doughnuts into the melted butter and triple coat in the cinnamon and sugar

11. Serve warm and Enjoy :)
